If I have a page (in this case a thank you page with a redirect to the homepage after 3 seconds) and it is marked as the screenshot indicates - should it appear in the sitemap.xml that is generated?
Yes it will end up in the sitemap. To exclude it you need to turn on the search engine control section and set it to denying both indexing and archival.
